And here I am again with another recipe from Jamie Oliver's Comfort food book! I really really love that book, even if I'm not looking for a recipe I enjoy reading/ looking it...and secretly I've planned to test all the recipes on it too!
This time it was the time for this retro cake. I remember having it a long time ago and I thought that it was a perfect excuse to celebrate the end of the winter and welcome the good weather finally...I don't know why but pineapples always make me think about the summer and the sun. The recipe I was familiar with was just a plain upside down cake with pineapple, but Jamie's recipe adds coconut (flakes and milk) and I think it came out as a brilliant combination...even the man in the house liked it! it's not too sweet, but it is still a cake and it has fruit in it, so everybody was happy. So if you have the book and you are looking for something to enjoy with your tea or coffee while enjoying the SUN on your balcony/terrace/garden....try it!
