This kind of bread is perfect for breakfast and kids love it. It's not too sweet and the butter makes it really soft. This recipe is for a big brioche, but don't be afraid, if it gets dry you can always make torrijas. Ingredients
600g flour 00 type 5 eggs + 1 egg wash 300g butter 70g sugar 10g salt 40g fresh yeast 80ml milk Mix the warm milk with the yeast and dissolve the sugar and salt. Add this mix to the flour, add the eggs and leave 30 mins to rest. Add the butter to the flour mix and work until a smooth and shiny dough. Rest for another 30 mins. Work the dough until light and flexible and divide in balls. Grease the brioche form (you ca use what you want...I used a normal oven bake one) and leave 1 hour to rest in a warm place until it doubles its size. Turn on the oven to 200ºC and when it's warm bake the brioche 10 min at 200ºC and then reduce to 180ºC and bake for another 20mins. Enjoy!

![]() This is a really easy and quick appetizer. We tried it last night and loved it! These Mediterranean-inspired cigars are a really great appetizer to have in your back pocket. Ingredients: 200g feta 75g olives in chunks or tapenade thyme salt and pepper phyllo sheets butter 2 eggs sesame seeds Preheat the oven 200ºC . In a large bowl, combine the feta cheese, olives and egg. Use the back of your fork to mash it into a creamy mixture. Add the thyme and some pepper. Prepare your work surface with a clean cutting board, a bowl with the melted butter, a pastry brush, the feta cheese mixture, and a baking sheet. Take the first phyllo sheet and cut it in small pieces (depending on how big you want the rolls). Brush the melted butter, add a tbsp of the feta mixture and roll it! Brush the top of the rolls with some egg wash and add the sesame seeds. Bake for around 20-25 mins, until golden brown and crispy! I love cooking but there are some days when you are just lazy or had crazy day and don't have much energy to cook...but even those days you need to eat good! As I said before I'm mother of a 2 years old boy who doesn't always let me so much time to cook when we are alone...today was one of those days. I decided making some guacamole, it's so simple, healthy and yummy! As you can see in the next picture you just need a couple of things and in no time it's ready to eat! While I was making the guacamole I put some fish sticks in the oven...yes, I know, fish sticks, not the best thing to eat, but again today it was about simple and quick dinners...
Ok, fish sticks ready, guacamole ready...just grab some gorditas (or tacos) some cucumber, tomatos...and done! |
