First of all sorry for the long time without posting, but I do have a good excuse...I'm expecting a baby girl in november and the first pregnancy months were a bit difficult to combine with cooking (if you know what I mean)...but I'm back again and since I'm getting big anyway I decided sharing with you even more yummy recipes!
Let's start with this baking recipe. I've never met anyone who doesn't love cinnamon rolls, they smell amazing, are perfect for a rainy day and simple to make...I know you can buy them, but believe me once you've tried this recipe once you won't go back to the bakery! Ingredients for about 12-20 rolls 390g flour 210g milk 75g sugar 75g butter 3-4g instant yeast ( or 9-12g fresh yeast) 4g salt 1 tsp cardamom 1 tbsp cinnamon Ingredients for the filling 70g butter 70g brown sugar 1 tsp cardamom 1 tbsp cinnamon 1. Let the butter melt in the warm milk and then leave to cool (until it reaches the body temperature). Add the yeast. 2. Add 2/3 of the flour to the milk and butter and mix with a spoon for about 5 mins. Add the rest of the flour and the sugar, salt and spices. Mix well. 3. Work the dough on a surface until it gets shiny and silky. About 7-10 minutes of work. 4.Leave the dough to rest for about 1 hour. 5. Roll out the dough. Think about making a square 40x40cm and 3mm. 6. Prepare the filling. Melt the butter and spread it all over the dough, sprinkle the sugar and spices over the buttered dough. 7. Fold the dough in 3 parts and leave 10 minutes to rest. 8. Cut the dough into stripes.You can roll this stripes or use your imagination and make all kind of knots with them. Leave to rest another hour. Paint them with some egg and decorate with sugar, almonds, more cardamom... 9. Bake for about 6-7 minutes in a pre-heated oven 250ªc
