I love cooking but there are some days when you are just lazy or had crazy day and don't have much energy to cook...but even those days you need to eat good! As I said before I'm mother of a 2 years old boy who doesn't always let me so much time to cook when we are alone...today was one of those days. I decided making some guacamole, it's so simple, healthy and yummy! As you can see in the next picture you just need a couple of things and in no time it's ready to eat! While I was making the guacamole I put some fish sticks in the oven...yes, I know, fish sticks, not the best thing to eat, but again today it was about simple and quick dinners...
Ok, fish sticks ready, guacamole ready...just grab some gorditas (or tacos) some cucumber, tomatos...and done!

Cheesecake has always been one of my favorites, every time I see it on the menu I have to order it, but even if it looks like a simple cake there are not many places where you can find that perfect one. My two favorite places for a cheesecake are De Bakkerswinkel (Rotterdam) and Restaurante Susperregi (near San Sebastian).
I am still looking for the perfect recipe at home...this last weekend I tried the one from Made in America. It's the classic New York Cheesecake...it was good and easy! If you want to try it at home too, here is the recipe! Ingredients: 175g sugar 125g creme fraîche 1 tsp cinnamon 2 tbsp flour 600g cream cheese (Philadelphia) 100g butter 1 vanilla pod 200g graham crackers 3 eggs Let's bake! 1. Preheat the oven 180º-200º First crumble the graham crackers and mix them with the melted butter and the cinnamon. Use this to make the bottom of your cake. Press the mixture on the bottom of your springform cake tin and place it in the fridge. 2. Mix the cream cheese, vanilla, flour, sugar, eggs and the creme fraîche. You should get a smooth creamy batter. 3. Pour the filling in the springform and bake for 10 mins. Reduce the oven temperature to 120º and bake for another 30 mins. 4. Let the cake cool down and then leave it in the fridge for at least 4 hours. Enjoy! There is nothing better to do in a cold winter day as today than enjoying a cup of tea while looking for some nice recipes to cook the following days...I'll keep you posted! |
