Cheesecake has always been one of my favorites, every time I see it on the menu I have to order it, but even if it looks like a simple cake there are not many places where you can find that perfect one. My two favorite places for a cheesecake are De Bakkerswinkel (Rotterdam) and Restaurante Susperregi (near San Sebastian).
I am still looking for the perfect recipe at home...this last weekend I tried the one from Made in America. It's the classic New York Cheesecake...it was good and easy! If you want to try it at home too, here is the recipe!
125g creme fraîche
1 tsp cinnamon
2 tbsp flour
600g cream cheese (Philadelphia)
1 vanilla pod
200g graham crackers
Preheat the oven 180º-200º
First crumble the graham crackers and mix them with the melted butter and the cinnamon. Use this to make the bottom of your cake. Press the mixture on the bottom of your springform cake tin and place it in the fridge.
Mix the cream cheese, vanilla, flour, sugar, eggs and the creme fraîche. You should get a smooth creamy batter.
Pour the filling in the springform and bake for 10 mins. Reduce the oven temperature to 120º and bake for another 30 mins.
Let the cake cool down and then leave it in the fridge for at least 4 hours.
